Le Soupir - Brassage & Assemblage Lost Wisdom
Lost Wisdom is a complex Mixed Fermentation IPA that bridges 19th-century heritage with modern technique. Fermented with a blend of Verdant yeast and Brettanomyces Claussenii, it offers an aromatic profile of tropical fruit and rustic funk. The use of Mandarina Bavaria and Hallertau Blanc hops introduces vibrant notes of tangerine, white grape, and gooseberry. Aging in French gin barrels—originally housing Sauvignon Blanc-based spirit—imparts a botanical sophistication and vinous depth. This dry, assertive ale balances firm bitterness with intricate layers of wood-derived tannins and wild yeast character, resulting in a uniquely refreshing and storied sensory experience.
Appearance. Deep gold to light amber (6–10 SRM). Persistent, fine-beaded white head with excellent lacing. Slight haze present from mixed fermentation and dry-hopping.
Aroma. High intensity. Bright tangerine and citrus zest from Mandarina Bavaria mix with white grape and elderflower from Hallertau Blanc. A distinct funky complexity follows, featuring pineapple, hay, and light leather from Brettanomyces Claussenii. Subtle gin botanicals and a vinous, Sauvignon Blanc-like acidity emerge from the barrel aging.
Taste. Leading with a sharp citrus and stone fruit impression, the palate quickly transitions into dry wood tannins and herbal gin notes. Low cracker-like malt support allows the hops to shine. Bitterness is firm but refined. The finish is bone-dry and funk-forward, with lingering notes of grape skin, tropical fruit, and a touch of peppery spice.
Mouthfeel. Medium-light body with a crisp, refreshing texture. High carbonation enhances the dry finish. Minimal astringency despite the barrel aging; a very light, integrated alcohol warmth is present.
