Land & Labour Crimson is a sophisticated sensory study in spontaneous fermentation, blending a one-year-old aged base with an intensive fruit maceration. The profile is defined by a heavy 75% concentration of sour cherries and 25% raspberries, creating a transcendent fermented fruit character that is both vinous and bright. The aroma leads with deep, funky barnyard notes and earthy hay, which quickly yield to the sharp, acidic presence of the berries. On the palate, the experience is bone-dry and puckeringly tart, showcasing the complexity of the wild microflora and the tannic structure of the fruit skins, finishing with a lingering, clean acidity.
Appearance. Deep crimson to ruby-red with a brilliant clarity despite the high fruit load; features a thick, mousse-like pinkish-white head with excellent retention and fine lacing.
Aroma. High intensity aroma dominated by fermented sour cherries and floral raspberries; secondary notes include complex barnyard funk, wet hay, and a light aged oak woodiness; no hop aroma is present.
Taste. A sharp, clean lactic acidity leads into rich flavors of tart cherry and bright raspberry; the spontaneous fermentation provides earthy, goat-like funk and a hint of cider-like fruitiness; bone-dry finish with zero hop bitterness and a lingering, refreshing tartness.
Mouthfeel. Medium-light body with a high, sparkling carbonation that provides a prickly sensation; moderate puckering tartness is present without harshness; very low astringency from fruit tannins and no perceived alcohol warmth.
