Naso rustico e selvatico con effluvi citrici di limone, aceto di mele, uva spina, nettarina acerba, foglie verdi, un tocco terroso, legnoso e di vino bianco e le immancabili note funky (cuoio, cantina, fieno umido, aia, cortile, vecchi giornali e carte da gioco). Corpo medio-pieno, carbonatazione appena al di sotto della media. Al palato, dove domina un’acidità lattica, è secca con un sapore asciutto caratterizzato da una sapidità citrica di limone, di frutta acida (mela verde, uva bianca e pesca acerba) con toni acetici, legnosi, vinosi ed un funk leggero ma duraturo: il tutto disteso su un fondo pieno di malto e corredato da una nota alcolica riscaldante che richiama il Calvados. Finale aspro con agrumi, note terrose, legnose e fruttate. Potente sicuramente ma ancora molto Gueuze.
