This naturally fermented wild ale captures a rustic elegance through its maturation in Burgundy Chardonnay barrels. The aroma is a complex tapestry of earthy Brettanomyces funk, soft oak, and the bright, tangy scent of fresh rhubarb. On the palate, a crisp dryness prevails, driven by high attenuation and the tart, vegetal fruitiness of the rhubarb. Subtle vinous notes from the Chardonnay wood add layers of white grape and vanilla, while the fermentation contributes hints of stone fruit and wet hay. Effervescent and light, this Brett Beer balances its wild character with a refined, barrel-aged finish that is both refreshing and complex.
Appearance. SRM 3-6. Pale straw to light copper with a subtle pinkish hue from the rhubarb. Slightly hazy with a thin, white head that displays moderate to low retention.
Aroma. Moderate to high intensity. Characterized by earthy funk—wet hay and dusty cellar—mingled with the sharp, tart aroma of rhubarb. Vinous notes of white grape and light toasted oak from the Chardonnay barrels provide a sophisticated, fruity backdrop.
Taste. Bone dry and highly attenuated. Initial tartness from the rhubarb transitions into a complex mid-palate of stone fruit esters and mild earthy funk. Hop bitterness is very low. The finish is clean and lingering, with a delicate woody tannin and vinous white wine character from the barrel aging.
Mouthfeel. Light body with a crisp, refreshing quality. High carbonation provides a prickly effervescence. No perceptible alcohol warmth. Very low astringency despite the inclusion of rhubarb and oak.
