L’acqua per la birra è estratta da cinque pozzi profondi 200 metri per rispettare le tradizioni delle abbazie. Il grano rimanente dopo che il mosto viene filtrato dalla poltiglia, viene usato per alimentare la propria mandria di mucche nella abbazia.
La Trappe Dubbel è una birra ambrata che emana al naso intense fragranze di frutta matura (mela, ciliegia, banana, frutti di bosco, litchi e prugna), frutta secca (datteri), caramello, zucchero candito, crosta di pane, malto biscottato ed un profumo inebriante speziato di lievito (chiodi di garofano).
In bocca dove sostanzialmente ci vengono riproposti le note percepite al naso, è gradevole, strutturata e consistente, con una saporosità dolce di malto, caramello, note di confettura di ciliegie e liquirizia.
Il luppolo è presente ed arriva solo a fine corsa donando un retrogusto molto morbido e finemente secco ed amaro.
