This captivating sour gruit offers a striking fusion of rustic herbalism and vinous sophistication. Pouring a luminous pale gold, it immediately releases a complex bouquet of earthy mugwort, reminiscent of wild sage and chamomile, integrated with bright white wine aromas of gooseberry and damp oak. The palate delivers a sharp, refreshing lactic acidity that mirrors tart green apple, balanced beautifully by the herbal, slightly tea-like bitterness of hand-picked mugwort. White wine barrel aging imparts elegant dry wood tannins and vinous depth, leading to a crisp, bone-dry finish that lingers with a clean, wild complexity.

Appearance. Pale straw to luminous light gold with a slight haze. Topped by a bubbly, pristine white head that dissipates somewhat quickly due to acidity, leaving light lacing.
