La Source Beer Co. Cigale is an intense, high-gravity Grape Ale that beautifully bridges the worlds of wild fermentation and fine winemaking. Infused with Sauvignon Gris pommace, it delivers vibrant sensory layers of white peach, gooseberry, and crushed wet stone, heightened by a touch of tropical Mosaic hops that lend hints of passionfruit and berry. At a bold 10% ABV, its striking, sharp sour profile slices through a lean malt base, culminating in an ultra-dry, sparkling finish. This complex creation marries rustic vinous character with a bright, puckering acidity, offering a sophisticated, deeply aromatic drinking experience.
Appearance. Light golden with a delicate, pale straw-yellow hue. Brilliant clarity with an effervescent body. Pours a bubbly white head with medium-low retention that quickly recedes to a fine collar.
Aroma. High intensity. Prominent vinous aromas of white grape, gooseberry, and apricot from the Sauvignon Gris pommace, integrated with tropical notes of passionfruit and blueberry from the Mosaic hops. A sharp, lactic sourness is present alongside a neutral, crackery malt background.
Taste. An initial impression of puckering, lactic acidity and vinous tartness. Dominant flavors of underripe stone fruit, white currant, and grapefruit. Very low malt sweetness, acting as a crisp vehicle for the fruit. Low bitterness, though enhanced by a dry, tannic grip from the grape skins. Hops add subtle tropical mango and berry layers in the background. Finishes exceptionally dry, acidic, and clean with a lingering grape skin tartness.
Mouthfeel. Medium-light body with a sharp, crisp texture. High carbonation creates a lively, effervescent, sparkling wine-like sensation. Noticeable but well-integrated alcohol warmth without being hot or solventy. Puckering but not overly astringent.
