La Pirata KamikACCE
Created in collaboration with award-winning homebrewer Gabriel Velasco, this Specialty IPA captures the effervescent and bone-dry character of the Brut IPA substyle. The sensory profile is driven by a vibrant combination of Citra and Mosaic hops, which project a lively bouquet of tropical mango, crushed blueberries, and bright citrus zest. Designed for maximum drinkability, the malt remains nearly invisible, providing a lean, pale foundation that allows the hop aromatics to sparkle against a crisp, champagne-like finish. This award-winning recipe emphasizes aromatic intensity and a refreshing, spritzy carbonation, delivering a modern and exceptionally clean expression of the style.
Appearance. Pale straw to light gold (SRM 2–4). Brilliant clarity with a large, frothy white head that demonstrates good persistence and light, delicate lacing. Highly effervescent with visible rising bubbles.
Aroma. High intensity hop aroma featuring prominent notes of passionfruit, grapefruit, and lime from the Citra, alongside blueberry and subtle resinous pine from the Mosaic. Malt character is neutral and very low. Fermentation is clean with no significant yeast-derived esters.
Taste. Bone dry and extremely crisp. Initial hop flavors of tropical fruit and citrus dominate the palate, followed by a very low, neutral malt presence. Bitterness is moderate but perceived as firm and snappy due to the absolute lack of residual sugar. The finish is short, clean, and refreshing, with a lingering citrus zest aftertaste and no harshness.
Mouthfeel. Light body with a thin, crisp texture. High carbonation provides a prickly, spritzy sensation on the tongue similar to a dry sparkling wine. No alcohol warmth or astringency present.
