Upside Down is a vibrant Wild Specialty Beer inspired by Mexican street snacks, offering a sensory journey through tropical fruit and rustic fermentation. At a sessionable 4% ABV, it leads with an aromatic explosion of ripe mango and zesty lime, underscored by a complex, funky wild fermentation character. The natural sweetness of the mango is fermented out, leaving behind deep fruit esters and a dry, crisp profile. A gentle, savory heat from the chili addition provides a thoughtful counterpoint to the sharp, citrusy acidity, resulting in a brilliantly refreshing and multifaceted palate that balances barnyard funk with bright, peppery warmth.

Appearance. Pours a hazy, pale gold to orange-amber (5–8 SRM) with a thin, effervescent white head that dissipates quickly, leaving light lacing characteristic of high-acidity wild ales.

Aroma. High intensity aromatics of fresh mango pulp and sharp lime zest dominate. Underlying these are complex wild fermentation notes of hay, earthy funk, and a light lactic tartness. Malt is nearly imperceptible, and hop aroma is absent, while a faint, spicy pepper note provides a savory edge.

Taste. The palate is immediately struck by a sharp, refreshing acidity and bright lime juice. Fermented mango contributes a deep tropical flavor without sweetness, followed by rustic barnyard funk and a mild lactic sourness. Hop bitterness is very low, replaced by a delicate capsaicin tingle from the chili. The finish is bone-dry and clean, with a lingering, savory fruit skin aftertaste.

Mouthfeel. Light-bodied and lean with a high, spritzy carbonation that enhances the perceived tartness. No alcohol warmth is present, though a mild, pleasant tingling from the chili provides a unique tactile sensation. Very low astringency.
