This refreshing Saison presents a rustic, multi-grain foundation of Pilsen, malted wheat, and raw spelt, providing a soft, grainy texture. The yeast profile is classically spicy and fruity, harmonizing with a complex hop blend featuring Azacca, Chinook, and Cascade. Expect vibrant notes of tropical fruit and citrus alongside the herbal, floral nuances of Aramis and Tradition. Brewers' Gold adds a subtle spice that leads into a bone-dry, highly attenuated finish. Effervescent and crisp, it showcases a beautiful balance between traditional farmhouse character and modern hop aromatics, delivering a lingering peppery aftertaste and a clean, refreshing bitterness.

Appearance. Pale gold (approx. 5 SRM) with a slight, hazy luminescence from the unfiltered raw spelt and wheat. It is crowned by a dense, rocky, long-lasting white head that leaves intricate Belgian lace on the glass.

Aroma. Moderate to high intensity with a complex bouquet of peppery yeast phenols and fruity esters resembling apricot and lemon zest. The hop character is multifaceted, displaying floral Aramis notes and tropical Azacca highlights, backed by a faint, grainy malt sweetness and a touch of zesty tartness.
