This American Lager offers a whimsical sensory experience, balancing a clean, refreshing profile with a savory, earthy depth. The appearance is brilliant and straw-colored, inviting a sip that reveals a neutral malt base of light grainy sweetness. What sets this lager apart is the addition of thirty-two kilograms of oyster mushrooms at the boil, which integrates a subtle umami character into the delicate floral hop notes. Crisp and highly attenuated, the finish is exceptionally dry, allowing the unique fungal earthiness to linger softly without overshadowing the style’s hallmark thirst-quenching nature. It is a masterful, umami-forward twist on a classic, neutral style.
Appearance. Pale straw color (approx. 3 SRM). Brilliant clarity with a white, frothy head that displays moderate persistence before receding to a thin collar.
Aroma. Low intensity. Initial notes of sweet, grainy malt and a hint of corn-like sweetness. A delicate floral hop presence is complemented by a unique, light earthy and savory aroma reminiscent of fresh oyster mushrooms. Fermentation is very clean with no esters or phenols.
Taste. Crisp and relatively neutral palate. Low grainy malt flavor provides a brief sweetness before transitioning to a very dry finish. Low bitterness provides just enough balance. A subtle, savory umami quality from the oyster mushrooms adds complexity to the mid-palate, while the aftertaste remains clean and refreshing with a lingering touch of earthiness.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, carbonic bite. Alcohol is well-hidden with no perceptible warmth. Smooth and highly refreshing.
