La Cabane 9 Months IPA is a complex, historically-inspired American IPA that bridges old-world techniques with bold bitterness. Fermented with a characterful Burton-Upon-Trent yeast strain and aged for nine months in red wine barrels with Brettanomyces, it presents a sophisticated sensory profile. Herbaceous English hops lead the charge, offering earthy and floral aromas that intertwine with the rustic funk of Brettanomyces—think leather and wild berries. The extended wood aging imparts a structured oak presence and subtle vinous notes, while a firm, lingering bitterness cuts through the dry, medium-bodied frame. It is a layered ale where hop intensity meets wild fermentation complexity.
Appearance. Copper to deep amber in color with a slight haze. Features a moderate off-white head with good persistence and light lacing.
Aroma. High intensity with a prominent herbaceous and earthy English hop character. Complex layers of leather, barnyard funk, and subtle dark berry esters from Brettanomyces are supported by a faint vinous oak note and clean, grainy malt.
Taste. An assertive, strong initial bitterness leads into a dry, complex palate. Herbaceous hop flavors dominate the mid-palate, complemented by rustic funk and light toasted malt. The finish is very dry and crisp with a lingering, clean hop bitterness and a hint of red wine tannin.
Mouthfeel. Medium body with a smooth, slightly lean texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth is present, accompanied by very low oak-derived astringency.
