This elegant Grape Ale captures the vibrant intersection of artisanal brewing and fine viticulture. Utilizing Aligoté grapes from Yann Durieux, the beer exhibits a sophisticated sensory profile of green apple, lemon zest, and a hint of white floral blossoms. Six months of refinement in Burgundian barrels imparts a delicate structure of soft oak and a whisper of toasted wood without overshadowing the beer’s bright acidity. The mouthfeel is effervescent and vinous, reminiscent of a dry sparkling wine, with the neutral malt base providing a subtle, cracker-like foundation. It finishes crisp and bone-dry, highlighting the purity of the fruit and the expert integration of wood.
Appearance. Pale golden (approximately 5 SRM) with brilliant clarity. Pours with a white, fine-beaded head that shows medium-low retention and light lacing.
Aroma. Moderate-high intensity featuring prominent varietal white grape notes of green apple, pear, and citrus. Subtle bready, cracker-like malt character is secondary. Very low floral hop notes and faint hints of vanilla and spice from Burgundian barrel aging. Clean fermentation profile without esters or phenols.
Taste. Leading with a bright, tart Aligoté grape flavor—lemon, green apple, and white peach. The malt flavor is supportive and neutral, suggesting lightly kilned grain. Hop bitterness is low, providing just enough structure to balance the vinous acidity. The finish is exceedingly dry and crisp, with a lingering note of grape skin and light oak tannin.
Mouthfeel. Medium-light body with a high, spritzy carbonation that creates a sparkling wine-like sensation. Very low alcohol warmth. A touch of dryness and mild astringency from the grape skins and oak refinement enhances the crispness.
