L'Ermitage Epine Noire

This Double Saison presents a sophisticated sensory profile defined by a year of barrel aging and a generous addition of fresh Stanley plums. It pours a hazy, deep amber with distinct garnet highlights. The aroma is highly complex, weaving together the rustic, leathery funk of Brettanomyces with intense jammy plum esters and the classic black pepper spice of a farmhouse yeast. On the palate, it is remarkably dry, showcasing a tart stone fruit character and delicate oak tannins. The high carbonation and 7.5% ABV provide an effervescent, warming sensation that balances the rustic earthy notes and vinous fruit depth, concluding with a clean, lingering tartness.
Appearance. Deep amber to copper with a vibrant garnet or reddish-purple hue from the macerated Stanley plums. Hazy clarity with a dense, long-lasting, off-white head that shows a faint pink tint and excellent Belgian lace.
Aroma. High intensity with a complex blend of fruity and spicy characters. Distinctive stone fruit esters from Stanley plums are prominent, complemented by the earthy, barnyard, and leathery notes of Brettanomyces. Moderate spicy phenolics like black pepper pair with low, floral continental hop notes and a subtle, toasted oak vanillin from the barrel.
Taste. Initial tartness from fresh plums leads into a grainy, rustic malt profile. Medium-high esters of dark fruit and spicy yeast phenolics are balanced by an earthy, bone-dry finish. Hop bitterness is moderate but often perceived as lower due to the refreshing acidity. The finish is dry and complex, featuring lingering plum skin and subtle wood tannins.
Mouthfeel. Medium-light to medium body with a very high, effervescent carbonation. A noticeable but well-integrated alcohol warmth provides a smooth glow. Low astringency from the fruit skins and barrel aging adds structure to the otherwise crisp mouthfeel.

Los lúpulos Idaho 7, Galaxy y Mosaic son variedades de lúpulo altamente valoradas por su sabor y aroma distintivos. El Idaho 7 es conocido por sus notas de frutas tropicales, cítricos y pinos, que aportan un sabor complejo y afrutado a la cerveza. Por su parte, el Galaxy es un lúpulo australiano que se caracteriza por sus sabores intensos a maracuyá, durazno y cítricos, lo que le confiere un perfil de sabor afrutado y picante. El Mosaic, por su parte, es un lúpulo americano que se destaca por sus sabores a frutas tropicales, bayas y hierbas, lo que le otorga un carácter de sabor intenso y refrescante a la cerveza.

En nuestra cerveza, estos tres lúpulos se combinan para crear una experiencia de sabor única. Con el Idaho 7, obtendrás sabores tropicales y cítricos, mientras que el Galaxy aporta un toque de acidez y un perfil afrutado.
