Jester King Brewery Colour Five

Colour Five presents a vibrant sensory journey, defined by the rustic elegance of the Texas Hill Country. This Brett Beer showcases an intense refermentation with Texas blueberries, resulting in a jammy, fruit-forward profile that melds seamlessly with the signature mixed culture. Aromas of sun-ripened berries are layered over complex farmhouse funk—notes of wet hay and earthy barnyard—tempered by soft wheat, barley, and subtle oak tannins. On the palate, it is exceptionally dry and effervescent, delivering a sharp tartness that highlights the fruit's natural character. The finish is crisp and lingering, leaving a lasting sensory impression of wild berries and woodland earth.
Appearance. Striking deep magenta to vibrant purple hue (SRM 25+). Hazy to opaque due to the heavy fruit addition and lack of filtration. A mousse-like, pink-tinted head shows moderate retention with slight lacing.
Aroma. High intensity. Jammy, sun-ripened blueberry leads, followed by the complex funk of a native mixed culture featuring hints of wet hay, barnyard, and a touch of dusty earth. Subtle floral hops and a soft, bready wheat character provide a canvas for light oak-derived vanilla and tannins.
Taste. Initial impression is sharply acidic and refreshing. The palate is dominated by the intense flavor of fresh blueberries and berry skins. It is bone-dry, allowing the earthy, funky Brettanomyces character—ranging from hay to leather—to shine through in the mid-palate. No hop bitterness is perceived, balanced instead by fruit tartness and subtle wood tannins. The finish is remarkably clean, dry, and crisp.
Mouthfeel. Light-bodied and highly effervescent with brisk carbonation. A prickly acidity is balanced by a slight tannic grip from the fruit and oak, finishing bone-dry with no perceptible alcohol warmth despite the strength.

On January 24, 2017, we’ll be releasing this year’s batch of Colour Five, our barrel aged sour beer refermented with Texas blueberries!
It will be available by the glass and in bottles to go. The bottle limit is two per customer per day. About 3,400 bottles are available. Aside from special events, Colour Five will not be available beyond our tasting room.
This year’s batch is refermented with blueberries harvested this past fall in Northeast Texas. It’s 6.0% alcohol by volume, 8 IBU, 3.2 pH, and had a finishing gravity of 1.000 (0 Plato).
