This unique Saison is a sensory odyssey, merging traditional farmhouse character with the rustic terroir of Michoacán. Fermented with native microflora on roasted cupreata agave, it reveals an intricate bouquet of honeysuckle and bruleed banana. The use of aged whole leaf hops allows the complex agave profile to shine, offering deep notes of sultanas, prunes, and tanned leather. A whisper of smoke from the roasted agave hearts integrates seamlessly with grilled pineapple flavors. Intentionally low carbonation creates a still, vinous texture reminiscent of an orange wine, finishing with a delicate, refreshing acidity that balances its sophisticated, fruity complexity.
Appearance. Deep gold to pale orange with a slight haze. Due to the intentional low carbonation, the ivory head is thin and dissipates quickly with minimal lacing.
Aroma. High intensity and exceptionally complex. Leading with fruity esters of bruleed banana and sultanas, followed by floral honeysuckle. A rustic, earthy undertone of tanned leather and a very faint, pleasant wisp of smoke from the roasted agave are present.
Taste. The palate opens with grilled pineapple and dark fruit notes like prunes. The fermentation by native microflora provides a mild, clean acidity. Malt character is low and grainy, while hop bitterness is restrained due to the use of aged whole leaf hops. It finishes bone-dry with a lingering, wine-like tartness.
Mouthfeel. Medium-light body with a smooth, slightly oily texture from the agave. Carbonation is notably low, lacking the typical effervescence of the style to mimic a still wine. Alcohol warmth is negligible.

Maestro 2021 is a collaboration with La Luna Mezcal, S.A.C.R.E.D. Agave, and Agave Road Trip. It undergoes secondary fermentation directly on roasted cupreata agave heats directly from La Luna Mezcal in Michoacán, MX. It was brewed exclusively with aged whole leaf hops to allow the native micro flora on the agave to ferment the beer. This results in a wonderfully unique beer with notes of sultanas, tanned leather, honeysuckle, bruleed banana, prunes, grilled pineapple, a hint of smoke, and a deft touch of acidity on the finish. It is intentionally carbonated to a very low level to preserve the mouthfeel created by the agave. The combination of the pleasant acidity contributed by the Michoacan microflora and this low level of carbonation creates a drinking experience more akin to that of an orange wine rather than a traditional beer.
