This American IPA presents a sophisticated interplay between classic hop intensity and the rustic influence of juniper wood. The aroma is dominated by sharp resin and gin-like aromatics from the juniper wood, seamlessly blending with bright grapefruit and pine needle notes. On the palate, a firm bitterness anchors flavors of cracked pepper, cedar, and zesty citrus. Despite its robust 8.1% strength, the beer maintains a crisp, dry profile with a subtle, supporting grainy malt backbone. The finish is lingering and aromatic, leaving a refreshing trail of evergreen and citrus oil that defines its unique forest-forward character.
Appearance. Medium gold to light reddish-amber (8-12 SRM). Features a medium-sized, off-white head with good persistence and moderate lacing. Clarity is brilliant.
Aroma. High intensity hop aroma featuring resinous pine and citrus characteristics. This is complemented by a distinct aromatic contribution from juniper wood, offering notes of evergreen and botanical spice. Low, clean, grainy maltiness supports the hops; fermentation is clean with negligible esters.
Taste. High hop bitterness is immediate, followed by medium-high hop flavors of resin and grapefruit. The juniper wood adds a layer of spicy, woody, and cedar-like complexity. Low grainy malt flavor provides a neutral base. The balance is decidedly hop-forward, leading to a dry, clean finish with a lingering hoppy and botanical aftertaste.
Mouthfeel. Medium body with a smooth, crisp texture. Carbonation is medium-high. A noticeable but smooth alcohol warmth is present, consistent with the 8.1% ABV, with no harshness or astringency.
