This Specialty IPA presents a refined balance between dark malt character and classic American hops. Aromas are led by a prominent bouquet of resinous pine and bright grapefruit, courtesy of the Chinook and Cascade hops. A subtle layer of floral spice from Centennial adds complexity. On the palate, a gentle, de-bittered roast provides notes of cocoa and toasted bread without harshness, supporting the assertive bitterness. Despite its dark appearance, the beer remains light on its feet with a clean, dry finish. It successfully bridges the gap between a crisp IPA and a smooth, dark ale, offering high drinkability and a focused hop profile.
Appearance. Dark brown to nearly black in color (35 SRM). The beer is clear with an opaque center, topped by a persistent, tan, creamy head that leaves moderate lacing on the glass.
Aroma. High hop intensity featuring resinous pine, grapefruit peel, and a light floral touch. Low malt character provides background notes of toasted bread and a hint of dark chocolate. Clean fermentation profile with no significant esters.
Taste. Initial impression is hop-forward with flavors of citrus and pine needle. Medium-low malt flavors of cocoa and light toast follow, specifically avoiding burnt or ashy notes. Firm bitterness leads to a dry, clean finish with a lingering resinous aftertaste and a touch of roasted grain.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate. Very low alcohol warmth, consistent with its sessionable strength, and no perceptible astringency.
