Medium Rare is a refined West Coast-style American IPA that showcases a masterful blend of classic American hops and herbal accents. The sensory profile is dominated by the resinous and pine-forward qualities of Simcoe and Chinook, supported by the pungent, earthy notes of Columbus and the bright citrus flickers of Centennial. A unique addition of rosemary enhances the forest-like aroma, weaving a sophisticated spice through the clean, grainy backdrop provided by Pilsner and Carapils malts. With a firm bitterness and a remarkably dry, clean finish—stripping away any hint of diacetyl—this beer delivers a focused, top-shelf hop experience that remains balanced and incredibly crisp.
Appearance. Pours a brilliant pale gold to light amber with a medium-sized, persistent white head that leaves delicate lacing on the glass.
Aroma. High intensity hop aroma featuring prominent resinous pine, damp earth, and woodsy notes. A distinct herbal layer of fresh rosemary integrates with subtle grapefruit and floral hints. Malt presence is low and clean, offering a light grainy-sweet scent, while the fermentation profile remains neutral and free of diacetyl.
