This vibrant Wild Specialty Beer presents a striking sensory profile defined by a saturated berry medley. Built on a soft foundation of Golden Promise and oats, the beer is fermented with Philly Sour yeast, providing a clean, sharp lactic acidity that cuts through the dense fruit profile. Intense aromas of fresh raspberry and blueberry skin lead into a palate bursting with jammy strawberry and tart forest fruits. The addition of ice cream powder and maltodextrin creates a lush, creamy texture that mimics a fruit smoothie, while the finish remains refreshing due to the bright fermentation character. It is an indulgent, modern interpretation of a fruited sour.

Appearance. Deep reddish-purple to magenta (25–35 SRM), featuring a pink-tinted head with moderate to low retention and light lacing. The appearance is opaque and viscous due to the high volume of fruit purees and oats.

Aroma. High intensity of jammy raspberry, ripe strawberry, and floral blueberry. Clean lactic acidity with no funk or earthy phenols. Low bready malt character from the Golden Promise is present, alongside a sweet, vanilla-like creaminess from the ice cream powder.

Taste. Initial impression is a sharp, tart burst of mixed berries. High fruit flavor of raspberry and strawberry with a subtle blueberry skin tannin. Negligible hop bitterness. The Philly Sour yeast provides a bright, citrus-like acidity that balances the residual sweetness of the maltodextrin. The finish is lingering and fruity with a clean, tart aftertaste.
