This Wild Specialty Beer reimagines the traditional kvass through a contemporary, tart lens. A complex grain bill featuring Heidelberg, Wheat, and Rye malt provides a spicy, bready foundation, further enriched by the toasted caramel notes of Red Rye Crystal. Vibrant black currant drives a sharp, purple-fruit acidity, while a subtle infusion of cinnamon adds an earthy warmth. The noble character of Tettnanger hops provides a faint herbal counterpoint to the clean lactic tartness from Lactobacillus plantarum. It finishes crisp and dry, balancing rustic cereal depth with a refreshing, darkly fruited brightness that reflects its modern wild ale fermentation.
Appearance. Deep reddish-amber with a distinct violet hue; off-white to pale pink head with moderate to low retention; hazy appearance typical of high rye and wheat content.
Aroma. High intensity; prominent tart black currant and earthy cinnamon over a spicy rye and bready wheat malt base. Low herbal hop notes from Tettnanger are present. Lactic acidity is sharp and clean, with mild fruity esters from the London Ale III yeast.
Taste. Refreshing initial lactic tartness followed by deep black currant fruit. The malt profile is complex, showcasing spicy rye and nutty Red Rye Crystal flavors. Cinnamon provides a subtle, woody depth. Hop bitterness is very low, allowing the acidity to lead the balance. Finishes very dry and crisp with a lingering berry tartness and a hint of rustic cereal grain.
