This Imperial Stout offers a terrifyingly decadent sensory experience, merging the robust architecture of an English-inspired base with festive spice. The grist, featuring Roasted Barley, Chocolate malt, and Red Rye Crystal, produces deep layers of espresso and toasted pumpernickel. Comet BBC hops provide a subtle resinous counterpoint to the aggressive aromatic punch of ginger, cinnamon, and cloves. Lactose and flaked oats create a creamy, sugared-cookie texture that softens the 11% heat. It is a harmonious, liquid gingerbread, where the WLP002 yeast contributes faint dried fruit esters to a lingering, spiced-chocolate finish that remains both menacing and inviting.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, persistent deep tan head that leaves thick lacing. High viscosity is evident through visible legs on the glass.
Aroma. High intensity aromatics of freshly grated ginger, spicy cinnamon, and earthy cloves dominate initially. Beneath the spices lies a rich malt profile of dark chocolate, roasted coffee, and subtle burnt grain. Low earthy hop character from Comet BBC. Very low dark fruit esters such as prune and raisin from the WLP002 fermentation.
Taste. Bold initial impression of spicy gingerbread and bittersweet chocolate. Mid-palate reveals complex malt depths of toffee and toasted rye from Red Rye Crystal and Crystal Extra dark malts. Firm bitterness is well-balanced by lactose sweetness. Finish is long and warming with lingering notes of clove and roasted malt.
Mouthfeel. Full-bodied, thick, and chewy with a velvety, luscious texture enhanced by flaked oats. Carbonation is moderate. Noticeable but smooth alcohol warmth provides a pleasant glow without being sharp or solventy.
