This vibrant Wild Specialty Beer presents an intense sensory profile defined by its bold raspberry addition and creamy complexity. The aroma is dominated by fresh, tart berries and a lush, tropical hop presence from double dry-hopping with Mosaic and Citra. The addition of milk sugar and vanilla bean creates a decadent, smoothie-like sweetness that artfully balances the underlying wild fermentation's sharp acidity. On the palate, the zesty citrus and dark fruit notes of the hops harmonize with a velvety texture, leading to a finish that is simultaneously tart, sweet, and faintly funky, reflecting a sophisticated blend of fruit-forward intensity and nuanced fermentation character.
Appearance. Deep crimson to ruby red with a vibrant pink-tinted hue. The head is moderate, light pink in color, with fair retention and slight lacing. The beer is opaque and hazy due to the heavy fruit load and double dry-hopping.
Aroma. High intensity aromatics of jammy raspberry and creamy vanilla bean. Mosaic hops contribute notes of blueberry and tropical fruit, while Citra adds bright lime and grapefruit zest. A clean lactic tartness is present alongside a mild, earthy funk and a sweet, dairy-like scent from the milk sugar.
Taste. Initial impression is a burst of tart raspberry followed by a rich, marshmallow-like sweetness from the vanilla and lactose. Mosaic and Citra hop flavors provide layers of mango and citrus peel. Bitterness is very low, as the focus remains on the fruit and sugar balance. The wild yeast character offers a refreshing acidity and a slightly dry, complex finish that balances the residual sweetness.
Mouthfeel. Medium-full body with a creamy, pillowy texture and a velvety mouth-coating quality. Carbonation is moderate, providing a gentle lift. Alcohol warmth is subtle and well-integrated. A very slight fruit-skin astringency is present, enhancing the overall drinkability.
