This complex Wild Specialty Beer showcases an intense expression of Scottish blackcurrants, providing a deep, vinous character. The blend of young golden sour and two-year-old barrel-aged rye sour creates a layered foundation of sharp acidity and subtle spicy grain notes. Refermentation with 240g/l of fruit lends a vibrant, tart berry profile, further elevated by the dark fruit and spicy herbal qualities of Bramling Cross hops. Expect a harmonious interplay between the funk of the mixed culture, the earthy tannins of the fruit skins, and the refined oak influence from the extended barrel maturation from the Fierce by Nature project.
Appearance. Deep ruby to dark purple with a vibrant, pink-tinted foam; clarity is hazy due to the high fruit concentration and mixed fermentation with moderate head retention.
Aroma. High intensity aromatics of freshly crushed blackcurrants and dark forest fruits; complex wild funk featuring notes of damp hay and leather, underpinned by spicy rye and earthy, herbal Bramling Cross hop notes.
Taste. Immediate, puckering lactic tartness and intense blackcurrant flavor; mid-palette reveals spicy rye malt and dry oak tannins. Bramling Cross hops contribute a layer of spice and additional dark berry depth; finishes bone-dry and acidic with a lingering fruit-skin tannin.
Mouthfeel. Medium-light body with high, effervescent carbonation; noticeable fruit and wood-derived tannin provides a pleasant astringency that enhances the dry finish.
