Stupefier is a vibrant Wild Specialty Beer that showcases the saturated intensity of tropical fruit. Dominated by a staggering 200g/l addition of mango and passionfruit puree, the profile is an explosion of succulent stone fruit and sharp, tangy citrus. The base, composed of locally grown malted barley, wheat, and oats, provides a soft, hazy canvas for the brewery’s house Brettanomyces cultures. These yeasts drive a deep, funky complexity characterized by tinned pineapple and earthy esters. The result is a bold, acidic, and profoundly juicy experience where the wild fermentation and massive fruit additions merge into a singular, perverse platter of tropical sensory indulgence.

Appearance. Deep hazy gold to soft orange (5-7 SRM) with a light yellowish tint in the foam. Head is initially fizzy with moderate retention, leaving slight lacing as the acidity and fruit oils break down the bubbles.

Aroma. High intensity aromatics of fresh, pulpy mango and sharp passionfruit dominate the foreground. Beneath the fruit lies a complex web of funky Brettanomyces character, offering notes of pineapple, damp hay, and a light leathery quality. Low bready malt notes from the wheat and oats provide a subtle backdrop.

Taste. The initial impression is one of sharp, clean lactic acidity followed by a wave of succulent mango and tart passionfruit. The mid-palate reveals tinned pineapple esters and a soft, grainy malt presence. Hop bitterness is negligible, allowing the fruit and fermentation acids to provide structure. The finish is dry and puckering with a lingering, saturated tropical fruit aftertaste.

Mouthfeel. Medium-light body with a creamy, soft texture derived from the wheat and oats. Carbonation is moderate to high, providing a lively prickle on the tongue that enhances the perception of acidity. Alcohol warmth is very low, contributing to high drinkability.

HOLY GOAT -Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
We have taken an unconventional approach to yeast and fermentation, opting for a proprietary method that utilises Brettanomyces yeast for long maturation times (typically 3-4 months) to produce unique, complex, full-flavoured sour beer.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition, we also seek to pay homage to our brewing forbears, mixing old and new techniques with the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.
