Combinar las exigencias de los sibaritas de todo el mundo con el arte cervecero del corazón de Múnich es una de sus tareas más bonitas. La historia de Hofbräu München comienza con un desafío gastronómico hace más de 400 años, puesto que a los miembros de la corte no les gustaba la cerveza que se fabricaba en Múnich, Guillermo V, duque de Baviera, decidió fundar en 1589 Hofbräuhaus, lugar donde nació la fábrica de cerveza y la gastronomía. Actualmente, la empresa Staatliches Hofbräuhaus in München es una de las dos fábricas de cerveza tradicionales de Múnich que permanecen en manos gemanas.
En 1879 HB se registró como marca comercial y nació su logotipo, símbolo mundial de la cerveza alemana por excelencia. En 1958, tras la Segunda Guerra Mundial, la fábrica fue reconstruida por completo convirtiéndose en una de las atracciones turísticas más visitadas de Múnich y en una de las cerveceras más famosas del mundo. En sus más de 3.500m2 se venden millones de litros de cerveza al año. Durante la época de la Oktoberfest, HB es una de las principales cerveceras presentes. Refrescante y saciante
Vista: color amarillo dorado, cristalina, con una espuma blanca abundante y esponjosa.
Olfato: aromas de pan, cereal, y una presencia muy sutil de los lúpulos que le aportan un toque herbal.
Gusto: en boca domina el ceral, con notas de pan y un amargor final seco e intenso.
Sensación: textura aterciopelada, cuerpo medio, muy refrescante y saciante a la vez. Ideal para acompañar un buen codillo bávaro.

HOFBRAUHAUS Einsiedler Brauhaus GmbH is a midsize brewery located in Chemnitz, near the Czech border. It all started in 1885 when machinery industrial, Mr Emil Schwalbe, established the brewery in Einsiedel, near Chemnitz. During the 20th Century the brewery went through an eventful history. Einsiedel is a tiny place situated at the foot of the Ore mountains, part of the Bohemian massif, in the Free State of Saxony. The place Einsiedel was incorporated by Chemnitz in 1996.

La Hofbräu Original evidenzia un bel colore oro. Decisa l’intensità olfattiva e gradevole la sua finezza olfattiva, che palesa decisi sentori di malto, prevalentemente di mosto, sapientemente bilanciati da un erbaceo secco, soprattutto fieno, che copre le note di luppolo fresco. Note di miele e un leggero etilico completano il quadro olfattivo della Hofbräu Original. A livello di palato s’impone il malto, che a mano a mano che la birra si scalda rilascia in bocca sensazioni biscottate e di miele d’acacia. Grande equilibrio nella frizzantezza, fresca ma mai invasiva, e nel corpo, che si evidenzia come più che leggero ma non può dirsi totalmente rotondo, lasciando comunque una sensazione di birra saggiamente bilanciata.
Per quanto invece riguarda l’amaro è evidente che il maggior peso gustativo è appannaggio del malto. Il luppolo quindi, pur palesando la sua discreta presenza, cede lo scettro di protagonsta al gusto dolce e biscottato dei malti bavaresi. L’equilibrio gustativo è in via definitiva tendente al dolce. Non molto ricca di retrolfatto come del resto ci si aspetta per gran parte delle birre a bassa fermentazione. In compenso la persistenza retrolfattiva è decisamente lunga.
ABBINAMENTI GASTRONOMICI:
di corpo medio-leggero, la Hofbräu Original è una di quelle birre classiche il cui abbinamento sembra scritto nei manuali. In realtà la consuetudine italiana dell’ultimo mezzo secolo la abbina alle pizze di base, ossia la Marinara, la Margherita e la Napoli. L’acidità del pomodoro dovrebbe essere bilanciata con una birra poco frizzante ma in linea di massima circa 95 consumatori italiani su 100 sono ancorati all’idea che una pizza di base si debba abbinare con una birra di base.
Da questo punto di vista non si può non ritenere la Hofbräu Original una classica birra di base, considerando il fatto che non solo 94 consumatori su 100 considerano la Germania come la patria della birra ma il 98 per cento di loro vede la Baviera come la regione più caratteristica per il consumo e la cultura della birra. Vada per la pizza ma è un classico anche sorseggiarla con il più tipico ‘cibo di strada’ di tutta la Germania: würstel e crauti. A livello personale posso dire di aver gradito anche un abbinamento con un’insalata di Wurst fredda, tendente all’acidulo, cosicché il bilanciamento viene ottenuto con una nota dolce che smorza l’acido dei sottaceti.
