The sensory profile is defined by a sharp lactic acidity and rustic Brettanomyces funk, evoking damp hay and aged leather. A subtle wheat backbone supports the intense berry presence, leading to a bone-dry, effervescent finish that highlights the traditional farm-to-bottle approach of Boerenerf.
Appearance.Deep pink to ruby red (10–18 SRM) with a slight haze from the fruit. Features a thick, mousse-like, pink-tinted head with moderate retention and fine lacing.
Aroma.High intensity; dominant aromas of fermented raspberries and red wine-like esters. Complex funk includes notes of wet hay, horse blanket, and a mild goaty character, supported by a clean lactic tartness and very low wheat-like malt.
Taste.Sharply tart and intensely fruity with a focus on fermented raspberry skins and seeds. The malt flavor is low, providing a cracker-like wheat base.
