Ingredienserne kommer fra samarbejdspartnere på egnen, der også bruger hinandens restprodukter i et cirkulært fællesskab. På grund af forankringen i fjordlandet, brygger Herslev Bryghus efter de terroir-principper som man kender fra traditionsrige vingårde: Det er naturøl, brygget på landskabets smage, og derfor kan du både få hybenøl og birk, hvedeøl med asparges og spontanfermenteret hø-øl fra Herslev Bryghus, alt efter hvilken årstid du kommer forbi. Der bliver dog også kælet for de klassiske bryg og humlens bitterhed, som man kender fra Pilsner og IPA, og hele sortimentet er tilgængeligt i gårdbutikken.
