This Saison offers a rustic sensory journey, blending the herbal, sun-dried character of hay with the sophisticated influence of twelve months in French red wine barrels. The aroma is defined by a mild yet complex Brettanomyces funk—earthy and leathery—intertwined with vinous oak and soft tannins. On the palate, it is exceptionally dry and refreshing, balancing grainy malt with a delicate, tart mixed fermentation profile. The barrel aging imparts subtle red fruit notes and a structured finish, making this an elegant, farmhouse-inspired ale that honors tradition through patient maturation and unique botanical additions.
Appearance. Deep gold to pale amber with a slight haze from the mixed fermentation and extended aging. Features a dense, rocky ivory head with excellent retention and significant Belgian lace. Highly effervescent.
Aroma. Moderate to high intensity with a complex layering of earthy, leathery Brettanomyces funk and sun-dried hay. Substantial vinous character from the French red wine barrels, offering hints of dark berries and toasted oak. Low spicy yeast phenols like black pepper and a faint, grainy malt backbone.
Taste. Initial impression is bone-dry and crisp. The flavor profile is dominated by rustic hay and earthy funk, supported by a mild, tart acidity. Mid-palate reveals French oak tannins and subtle red grape skins. Hop bitterness is moderate but accentuated by the high attenuation. Aftertaste is lingering, woody, and spicy.
Mouthfeel. Medium-light body with high, prickly carbonation. Notable effervescence and a slight, pleasant astringency from the oak tannins. Very low alcohol warmth, finishing remarkably clean and dry.
