Installée à Bierghes (Rebecq), dans la vallée de la Senne, la Gueuzerie Tilquin est l’unique gueuzerie de Wallonie. Une gueuzerie, ou Geuzestekerij en néérlandais, est une entreprise de coupage de Gueuze à l’ancienne (ou Oude Geuze ).
Les moûts fraichement brassés, sont achetés chez différents producteurs de la région (Pajottenland et Bruxelles), et mis en fûts de chêne pour fermentation et maturation durant 1 an, 2 ou 3 ans. Les lambics obtenus sont assemblés et mis en bouteille pour donner, après 6 mois de refermentation, la Gueuze Tilquin à l’ancienne, qui titre 6.4% alc/vol et est vendue en bouteilles de 37,5 et 75cl.
