This vintage Gueuze presents an elevated sensory experience, blending traditional wild fermentation with the unique addition of organic maple syrup. The result is a complex profile where the classic barnyard and leather notes of the aged lambic blend meet a subtle, earthy richness. Fermenting the maple syrup dries out the sweetness, leaving behind a ghost of woodsy depth that complements the oak barrel aging. Despite its substantial 10% ABV, it maintains the spirit of the style, offering sharp acidity and a mousse-like effervescence. Expect a sophisticated interplay of citrus-like tartness, hay-like funk, and a lingering, bone-dry, vinous finish.
Appearance. Deep golden with amber highlights (6-8 SRM); brilliant clarity despite being unfiltered. Rises with a thick, rocky, mousse-like white head that exhibits exceptional retention and lacing.
Aroma. High intensity and complex. Assertive funk featuring horse blanket, leather, and earthy hay. Sharp lactic sourness is layered with rhubarb and citrus rind. The organic maple syrup contributes a unique woodsy, sap-like depth and a hint of vanilla from the oak barrels, rather than sweetness.
Taste. Sharply sour and funky, with a sophisticated balance of lactic acidity and aged lambic character (barnyard, goaty). Low grainy malt is supportively present, while the fermented maple syrup adds a savory, honey-like complexity. Bitterness is absent; balance is achieved through acidity. Finishes very dry and crisp with a tart, puckering aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture. High carbonation creates a prickly, effervescent sensation on the tongue. Noticeable but well-integrated alcohol warmth given the high strength. Moderate puckering tartness without being harshly astringent.
