Grimm Weisse is a refined Weissbier that utilizes a traditional double decoction mash to enhance the depth of its malted wheat and Pilsner malt foundation. This technique imparts a sophisticated bready and doughy complexity that supports the vibrant fermentation profile. The aroma is a classic display of ripe banana esters and spicy clove phenols, characteristic of authentic weizen yeast. Can-conditioning provides a traditional, high level of carbonation that creates a remarkably fluffy and effervescent texture on the palate. The experience concludes with a refreshing, dry finish, balancing soft grain sweetness with a delicate, spicy yeast character.
Appearance. Pale gold (4 SRM) with a brilliant haze and a luminous yeast shine. It features a very thick, moussy, long-lasting white head with dense lacing.
Aroma. Moderate to high intensity featuring prominent ripe banana esters and spicy clove phenols. The malt presence is notably bready and doughy with a grainy wheat character, complemented by a subtle hint of vanilla.
Taste. A harmonious balance of banana and clove flavors over a base of soft, bready wheat and grainy-sweet Pilsner malt. Bitterness is very low, allowing the yeast and decoction malt character to lead. The finish is clean and relatively dry with a lingering note of spicy phenols.
