Photonic Molecules is a vibrant American Pale Ale that highlights a modern trio of Idaho 7, Mosaic, and Ekuanot hops. This sessionable brew opens with an intense sensory bouquet of ripe mango, papaya, and crushed pineapple, grounded by a delicate resinous pine undertone. The Idaho 7 provides a distinct stone fruit depth, while Mosaic adds layers of blueberries and bright citrus. Ekuanot contributes subtle notes of melon and lime zest. A clean, bready malt foundation allows the complex hop character to shine without being overshadowed, leading to a crisp, dry finish that invites another sip of this refreshing, fruit-forward ale.
Appearance. Pale gold (6 SRM). Brilliant clarity with a moderately large, long-lasting white head and fine lacing.
Aroma. Moderately high hop aroma featuring tropical fruit (mango, pineapple), citrus (lime), and berry (blueberry) notes. Subtle pine and herbal undertones. Low grainy-sweet malt character supports the hop-heavy profile. Clean fermentation with negligible esters.
Taste. High hop flavor reflecting tropical fruit, melon, and citrus zest. Moderate bitterness provides a firm balance to the low, crackery malt presence. Idaho 7 adds a touch of earthy pine to the berry-forward Mosaic character. Clean fermentation profile leads into a dry, crisp finish with a lingering, pleasant citrus aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation. Overall smooth and refreshing without any hop-derived astringency or alcohol warmth.
