10.5% ABV 11 IBU 750 ml En 2002 se recuperó, tras 38 años de espera, la antigua tradición de elaborar la cerveza Gouden Carolus Christmas y tuvo una acogida a la altura de esta cerveza excepcional. Elaborada a finales de agosto, esta cerveza se conserva tumbada durante varios meses hasta alcanzar su óptimo equilibrio gustativo. Una vez vertida, la Gouden Carolus revela su magnífico color rojo rubí más bien oscuro. En nariz es fuerte, dulce e intensamente especiada. Recordemos que seis especias entran en su composición: nuez moscada, anís, cilantro, clavo de olor, jengibre y una pizca de piel de naranja. Este buqué aromático nos traslada directos a la Navidad. Una vez en el paladar nos depara un sabor nuevo a cada sorbo. Percibimos abundancia de maltas que recuerdan a la cebada, la melaza y la uva. Completan estos sabores las notas afrutadas a higos, dátiles y ciruelas. Esta cerveza de Navidad es más bien espesa y deja un regusto apreciable. El uso de tres variedades de lúpulo y de seis especias excepcionales en distintas fases de la elaboración convierten a esta cerveza en una bebida de categoría única. Por eso no sorprende que en 2004 obtuviera el Silver Award en la categoría de Belgian Style Dark Strong Ale en la World Beer Cup celebrada en San Diego (EE. UU.). Per oltre 35 anni il birrificio ha sospeso la produzione della birra di Natale, ma nel 2002 la tradizione è stata ripristinata con la Gouden Carolus Christmas.

È una birra forte, color rosso rubino scuro con una gradazione alcolica pari al 10,5%, nonostante il buon tenore alcolico è una birra dolce ed equilibrata.
Prodotta nel mese di agosto, la birra riposa alcuni mesi per raggiungere un equilibrio ottimale. Al palato è varia, complessa, risulta calda e morbida al primo impatto, con note quasi liquorose. Tre tipi di luppolo e sei diversi tipi di erbe e spezie definiscono il gusto ricco di questa birra di Natale. IL TOP!
Le spezie prevalgono ma si sentono note di liquirizia, caramello, fichi secchi, frutta scura (prugne, uva passa).

Di facile bevuta nonostante il tenore alcolico, leggero warming e con una punta di carbonatazione soft.
