The sensory journey begins with an aromatic bouquet of peppery phenols and bright citrus esters, characteristic of its traditional fermentation. On the palate, a soft, honeyed Pilsner malt base provides a brief sweetness before being overtaken by a deep, assertive bitterness and spicy hop notes. Despite its robust 9% alcohol content, the finish is remarkably dry and effervescent, hiding its strength behind a medium-light body. This Belgian Tripel balances fruity vitality with a clean, lingering bitterness that distinguishes it as a classic monastic-style powerhouse.
Appearance. Deep yellow to pale gold (6 SRM) with brilliant clarity and a voluminous, creamy, rocky white head that leaves significant lacing. Constant effervescence.
Aroma. Moderate to high intensity. Dominant peppery and clove-like phenols blend with citrus esters reminiscent of orange peel and lemon. Subtle floral hop notes and a soft, honey-like grainy malt sweetness underpin the spicy bouquet.
