Garage Project Mountain Call

This sophisticated Saison showcases a masterful integration of wild fermentation and artisanal infusion. Aged in wooden foeders with a unique house culture, the beer presents a complex acidic backbone that frames the distinctive addition of Lapsang Souchong tea. The sensory experience is defined by an exquisite journey of delicate wood smoke and fragrant pine resin, which transitions into the exotic, musky sweetness of dried longan fruit. A bone-dry finish and high effervescence accentuate the rustic yeast character, while the elevated strength provides enough structure to balance the bold, smoky tea elements against a crisp, grainy malt foundation.
Appearance. Deep gold to pale orange (SRM 6–9). Persistent, dense ivory head with excellent retention and significant Belgian lacing. Unfiltered with a slight haze and visible effervescence.
Aroma. High intensity. A complex aromatic blend of lactic tartness and earthy funk from the house culture. Pronounced notes of cold wood smoke and resinous pine from the tea infusion, followed by subtle hints of stone fruit and the leathery sweetness of dried longan. Low grainy malt and spicy black pepper esters emerge as it warms.
Taste. Initial sharp tartness followed by a layering of earthy smoke and pine resin. The mid-palate features flavors of dried longan fruit and citrus zest. Malt flavor is low and grainy, providing a lean platform for the tea character. Moderate bitterness is balanced by high acidity. Finishes bone-dry with a lingering, smoky, and spicy aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation. Noticeable but well-integrated alcohol warmth. Crisp and refreshing with a slight tannic structure from the tea and wood, but no harsh astringency.

The Garage Project is Pete Gillespie, Jos Ruffell, and Ian Gillespie.
When we started out we were tiny. Garage Project wasn't even micro brewing… it was a truly nano brewery.
After nine years of working in breweries with equipment 100 times bigger it was quite a change to downsize to a fifty litre brew kit. But what we lacked in size we more than made up for in agility and the ability to experiment.
When you’re brewing on such a small scale you can afford to take risks. That suited us. We wanted to try something new.
Five years have passed and we’ve grown, but that same ethos still shapes how we do things at the Garage. Whether we’re brewing 50 litres or 2000, we’re still here to take some risks, to have a bit of fun and to try something new.
Way back in the day, when we were just starting out, we wrote a little blurb about each other to shed some light on who we are, and what lead us down the path of starting a brewery in Wellington, (if you’ve ever written your own bio, you’ll know how hard it can be!).
