This Oud Bruin, a meticulously crafted homage to Flemish tradition by the Wild Workshop, presents a complex tapestry of sensory delights born from prolonged wood aging and a symbiotic blend of yeast and Lactobacillus. The initial bouquet is a rich, malty invitation featuring deep caramel and toffee, quickly joined by an assertive fruit character of dark sour cherry, raisins, and plums. On the palate, a delicate sweet-and-sour balance emerges, where luxurious chocolate and subtle coffee notes intertwine with a bright, integrated acidity. The finish is long and elegant, displaying the smooth, sherry-like nuances of its patient maturation, leaving a lingering impression of dark fruit and refined malt complexity.
Appearance. Dark mahogany to deep reddish-brown (SRM 18-22). Generally clear with an average to good head of light tan foam that exhibits moderate retention.
Aroma. High intensity with a rich malt profile showcasing caramel, toffee, and distinct chocolate and coffee notes. Complex fruity esters of dark sour cherry, prunes, and figs. A moderate, clean lactic sourness is present without any sharp acetic or vinegary character. Hop aroma is absent, while aged notes provide a light nutty or sherry-like nuance.
Taste. A complex malt-forward entry with flavors of burnt sugar, dark caramel, and chocolate. This is balanced by a medium-high fruitiness resembling black cherries and dried fruits. A refreshing, integrated sourness creates a classic sweet-and-sour profile. Hop bitterness is restrained and hop flavor is absent. The finish is smooth and lingering, showcasing a blend of malt sweetness and fruity acidity.
Mouthfeel. Medium-full body with a smooth, slightly creamy texture. Carbonation is low to moderate. A noticeable but well-integrated alcohol warmth is present, reflecting the 7.7% ABV. Free from astringency.
