This innovative Fruit Beer delivers a lush, multi-sensory experience that blurs the line between a wild-fermented IPA and a tropical juice cocktail. The complex hop profile, featuring Equinox, Nelson Sauvin, Galaxy, and El Dorado, provides a vibrant foundation of citrus and resin. A wild yeast strain introduces a distinctively tart edge, amplifying the natural acidity of added guava, mango, papaya, passionfruit, and lime. The result is a bold, aromatic profile where juicy stone fruit meets sharp tropical zest. It finishes with a refreshing, idiosyncratic tang, balancing potent fruit saturation with a firm, hop-driven structure and a clean, dry finish.

Appearance. Hazy, vibrant golden to light orange (6–8 SRM); thick, creamy white head with excellent persistence and heavy lacing.

Aroma. High intensity; dominant tropical fruit notes of passionfruit and lime, backed by a wild yeast character of tart pineapple. Significant hop presence from Nelson Sauvin and Galaxy contributes crushed gooseberry and passionfruit, while Equinox adds a subtle herbal and citrus complexity.

Taste. Initial burst of sweet guava and mango, quickly balanced by a sharp, wild-yeast acidity. Malt presence is low, providing a soft, bready backbone. Hop flavors are prominent, emphasizing citrus and tropical fruit with a moderate bitterness that prevents the fruit from becoming cloying. The finish is dry, tart, and lingering with lime zest.
