Back Block is a complex Wild Specialty Beer that bridges the gap between a rustic dark ale and a spontaneously fermented wildflower ale. Leveraging wild yeast foraged from mānuka flowers, the profile opens with a delicately tart citrus and vibrant floral honey character. The presence of mānuka tips introduces a unique spicy and resinous twist, while aging in oak barrels lends a subtle woody structure and vanilla-like depth. This mahogany-hued ale balances the earthy funk of wild fermentation with the toasted malt backbone of a dark base. It is a harmonious expression of native New Zealand flora, finishing crisp, dry, and distinctly herbal.
Appearance. Mahogany to deep brown (22–30 SRM). Light tan head with moderate retention and fine lacing. Slight haze is present, typical of a wild, spontaneously fermented ale.
Aroma. High intensity. Pronounced spicy and resinous mānuka character with herbal undertones. Wild yeast esters provide tart citrus and stone fruit notes, accompanied by a light earthy funk like wet hay. Subtle floral honey and toasted oak aromas mingle with a faint toasted malt background.
Taste. Initial tartness with citrus and floral honey notes. The flavor profile is dominated by the spicy mānuka twist and herbal, piney notes from the tips. Malt provides a supportive toasted bread and light cocoa character. Oak aging adds a soft tannic structure. Highly attenuated and dry with a lingering spicy, clean finish.
Mouthfeel. Medium-light body, attenuated significantly by the wild fermentation. Moderate to high carbonation provides a crisp, lively texture. Very low alcohol warmth. Minimal astringency from oak tannins.
