Leveraging wild yeast foraged from mānuka flowers, the profile opens with a delicately tart citrus and vibrant floral honey character. The presence of mānuka tips introduces a unique spicy and resinous twist, while aging in oak barrels lends a subtle woody structure and vanilla-like depth. This mahogany-hued ale balances the earthy funk of wild fermentation with the toasted malt backbone of a dark base. Appearance.Mahogany to deep brown (22–30 SRM). Light tan head with moderate retention and fine lacing. Slight haze is present, typical of a wild, spontaneously fermented ale.
