The watermelon provides a subtle, authentic fruit character rather than confectionery sweetness, enhancing the beer’s inherent tart apple and lemon esters. Its light body and very high carbonation create a tingling, thirst-quenching sensation on the palate. Effervescent and bone-dry, it finishes with a lingering, bright fruit note, embodying a sophisticated, fruit-forward interpretation of the classic German sour ale.
Appearance. Very pale straw with a faint, hazy glow. Features a large, dense, white head with poor retention, typical of the style, and very high effervescence.
Aroma. Intensity is moderately high, dominated by a sharp, clean lactic sourness. Authentic watermelon notes are prominent, supported by a light bready wheat and sourdough malt character. No hop aroma or diacetyl is present.
Taste. Initial impression is a bright, sharp lactic sourness. The flavor of fresh watermelon is well-integrated with a grainy, doughy wheat malt backbone. Hop bitterness is undetectable, with acidity providing the primary balance. It concludes with a very dry, crisp finish and a lingering, tart fruit aftertaste.
Mouthfeel. Light body with a prickly, very high carbonation. No alcohol warmth is perceived. The mouthfeel is defined by a crisp, refreshing acidity and a lack of astringency.
