Nau Mai is an intense Hazy IPA that showcases a masterful blend of Southern Hemisphere and American hop profiles. The sensory journey is dominated by the distinctive Nelson Sauvin variety, delivering punchy notes of white wine grapes, gooseberry, and a sophisticated whisper of petroleum. These are layered over the tropical depth of Mosaic, which contributes vibrant waves of ripe mango, citrus zest, and stone fruit. This juicy character is supported by a soft, pillowy malt backbone that remains clean and bready. The result is a highly aromatic experience with a smooth, restrained bitterness that highlights the complex interplay between the specific New Zealand and Pacific Northwest cultivars.
Appearance. Color ranges from pale straw to deep gold (SRM 4-6) with a significant, opaque haze that provides a characteristic shine. It features a persistent, rocky white head with excellent retention and thick, meringue-like lacing.
Aroma. High intensity aroma led by crushed white grapes, fresh gooseberry, and a distinct hint of diesel from the Nelson Sauvin. This is backed by pungent tropical notes of mango, passionfruit, and tangerine zest from the Mosaic hops. The malt character is low, offering a bready, grainy sweetness without any caramel or toast.
Taste. Initial impression is an immediate burst of tropical fruit and white wine character. Ripe berries, citrus rind, and stone fruit flavors are prominent throughout. The malt provides a neutral, bready base that balances the heavy hop load. Bitterness is moderate but remarkably smooth, lacking any harshness. The finish is off-dry and emphasizes a lingering fruit juice impression rather than a resinous bite.
Mouthfeel. Medium-full body with a soft, pillowy texture that feels plush on the palate. Carbonation is moderate, contributing to the overall smoothness. There is no astringency or hop-derived harshness, with only a very subtle, well-integrated alcohol warmth.
