Funky Fluid’s Gelato series reinterprets the Wild Specialty Beer style through a dessert-inspired lens. This Banana & Guava Cheesecake variant pours with a lush, smoothie-like consistency. The aromatic profile is dominated by ripe, creamy banana and the tropical, floral musk of white guava, underscored by a distinct New York cheesecake note providing hints of vanilla and graham cracker. On the palate, a soft lactic acidity balances a rich, dessert-like sweetness. The 18 BLG starting gravity ensures a velvety, full-bodied experience where the fruit takes center stage, finishing with a lingering, creamy tang reminiscent of a fruit-topped cheesecake.

Appearance. SRM 4-6; opaque and viscous, resembling a fruit smoothie. The color is a pale yellow with a slight pinkish hue from the guava. Pours with a thick, creamy white head that shows moderate retention and leaves significant lacing on the glass.

Aroma. High intensity fruit aromatics featuring dominant notes of sun-ripened banana and exotic, floral white guava. A secondary layer of sweet vanilla, tangy cream cheese, and a hint of biscuit-like malt creates a convincing New York cheesecake profile. Low lactic tartness with no hop aroma.

Taste. The initial impression is a burst of sweet tropical fruit and creamy banana. The mid-palate introduces a moderate lactic sourness that cuts through the rich, cheesecake-inspired sweetness. Flavors of guava nectar and vanilla custard are prominent. The finish is long and fruity, with a clean, tangy aftertaste and virtually no hop bitterness (IBU < 10).

Mouthfeel. Medium-full to full body with a thick, creamy, and coating texture due to the high residual density. Carbonation is moderate, providing enough lift to prevent the beer from feeling cloying. No alcohol warmth is detected.
