Appearance. Deep copper to light amber (12-14 SRM) with a large, persistent off-white head that leaves dense lacing. Generally clear, though a light haze may be present due to bottle conditioning.

Aroma. High intensity with a complex blend of resinous pine from Target hops and the earthy, floral, and woody scents of Goldings and Fuggles. A strong malt backbone of caramel and toasted biscuit is evident, complemented by a light spicy note of black pepper and clean, warming alcohol.

Taste. Initial impression is a balance of rich caramel malt and firm bitterness. The hop flavors are prominently earthy and herbal, lacking the citrus of American versions. Mid-palate reveals bready crystal malt depth and a distinct black pepper piquancy. It finishes medium-dry with a lingering resinous bitterness and a touch of peppery spice.

Mouthfeel. Medium-full body with a smooth, almost creamy texture from the bottle conditioning. Carbonation is moderate. A significant but smooth alcohol warmth is present, without harshness or astringency.
