Provocator is a rich, deeply expressive Doppelbock that exemplifies the power of traditional German brewing. Through meticulous decoction mashing, it achieves a profound depth of toasted bread crust and rich Maillard complexity. The noble hop profile of Mittelfrüh, Tradition, and Spalter Select provides a delicate counterpoint, offering subtle herbal and spicy notes that weave through the dominant malt tapestry. Appearance. Deep copper to dark brown (18–22 SRM) with brilliant ruby highlights. Large, dense, creamy off-white head with excellent persistence and lacing.

Aroma. High intensity maltiness featuring rich toasted bread, bread crust, and light caramel. Subtle dark fruit esters of plum and raisin are present. Hop aroma is very low, showing faint spicy and floral notes from the Mittelfrüh and Spalter Select. Clean fermentation with no sulfur or diacetyl.

Taste. Initial impression is powerfully malty and sweet, dominated by toasted grain and deep Maillard products. Hop bitterness is moderate-low, providing just enough balance to prevent cloying. Hop flavor is subtle, with herbal and spicy nuances from Tradition. Finish is moderately sweet but shows good attenuation, leaving a clean, malty aftertaste.
