Safflower is a vibrant Double IPA that showcases an explosive hop profile featuring Citra, Galaxy, Eclipse, and Vic Secret. The sensory experience is dominated by a saturated tropical canopy of passionfruit and pineapple, punctuated by bright mandarin citrus and a whisper of resinous pine. While rooted in the strength of a strong ale, it maintains a clean, supportive malt backbone that allows the 2025 crop of southern hemisphere hops to shine. The palate is punchy yet smooth, delivering a firm bitterness that balances the lush fruit esters, leading to a crisp, lupulin-forward finish that belies its 8.2% ABV.

Appearance. Deep gold to light orange (7-9 SRM). Persistent, fluffy white head with significant lacing. Characteristic moderate to heavy haze typical of modern interpretations.

Aroma. High intensity hop-forward bouquet. Dominant notes of passionfruit, ripe peach, and pineapple from Galaxy and Vic Secret, layered with mandarin orange zest from Eclipse and Citra. Background of neutral, crackery malt and low floral esters.

Taste. Initial burst of tropical fruit and citrus oil. Citra provides grapefruit and lime, while Eclipse adds a distinct sweet orange character. Mid-palate reveals resinous pine and pineapple from the Vic Secret. Firm bitterness provides structure without harshness. Finish is dry and lingering with hop resins and minimal malt sweetness.

Mouthfeel. Medium body with a soft, creamy texture. Moderate carbonation. Noticeable but well-integrated, smooth alcohol warmth. Very low hop-derived astringency.
