This vibrant hybrid cuvée captures a rustic elegance, weaving the delicate floral aromatics of heritage perry pears with the juicy, red-fruit depth of Gamay grapes. Produced by Jerôme Forget, the profile leads with succulent notes of ripe pear and wild strawberry, supported by a subtle earthy funk characteristic of farmhouse fermentation. The palate is dangerously gourmand, balancing a soft fruit sweetness against the structured tannins of grape skins and a refreshing, vinous acidity. Highly effervescent and textured, this Specialty Perry finishes bone-dry with a lingering minerality, embodying a sophisticated intersection between the Norman orchard and the vineyard.
Appearance.Salmon pink to pale ruby with a slight haze. Features a fine, mousse-like effervescence and moderate head retention that settles into a persistent ring of white bubbles.
Aroma.High intensity with a complex blend of delicate pear blossoms, ripe Bosc pear, and crushed raspberries. Secondary notes include a light farmhouse funk, dusty earth, and a clean, vinous sharpness from the Gamay skins.
Taste.Initial impression is tart red berries followed by succulent pear juice flavors. The Gamay provides bright cherry and subtle peppery notes. Bitterness is low, but structural tannin from the pear and grape skins provides a firm grip. The finish is very dry and crisp with lingering tartness and mineral salts.
Mouthfeel.Medium-light body with high carbonation. Alcohol warmth is noticeable but well-integrated at 7.6%. Moderate astringency from tannins contributes to a structured, wine-like mouthfeel.
