This Imperial Stout offers an indulgent sensory journey, balancing deep roasted malts with exotic spice. Intense aromas of cacao and toasted grain are immediately met by the warm, woody fragrance of cinnamon and the delicate, floral spice of pink pepper. On the palate, a velvety layer of dark chocolate and espresso merges with the piquant bite of the peppercorns, while the cinnamon adds a comforting, earthy sweetness. The 9% ABV provides a gentle, integrated warmth that carries the spiced notes into a long, bittersweet finish. It is a harmonious marriage of traditional stout robustness and creative spice integration.
Appearance. Jet black and opaque (SRM 40). Pours with a thick, deep tan head that shows moderate retention and leaves oily legs on the glass due to high viscosity.
Aroma. High intensity with a rich blend of bittersweet chocolate, cocoa, and heavy roasted coffee. Prominent notes of woody cinnamon and a unique floral, slightly resinous spice from pink pepper. Very low earthy hops and subtle dark fruit esters like raisin.
Taste. Initial impression is of rich, sweet dark chocolate and toasted grain. Medium-high bitterness is well-balanced by a residual malt sweetness and the heat of the spices. Significant cocoa flavor is accented by the spicy, peppery bite of pink pepper and earthy cinnamon. The finish is long and sweet with lingering notes of roasted malt and spice.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is present but well-integrated, accompanied by a slight spicy prickle from the pink pepper.
