This Triple IPA, a collaboration between Fauve and Brasserie Surréaliste, presents a saturating sensory experience. A massive double dry-hop addition featuring Cryo Pop®, Citra, Simcoe, Mistral T45, and Mosaic delivers an explosion of ripe mango, pink grapefruit, and resinous pine. The high strength is evident through a sophisticated alcohol warmth that supports intense tropical fruit and berry-like esters. Beneath the hop dominance, a clean, grainy malt profile provides a sturdy foundation without adding cloying sweetness. The finish is remarkably dry for its 9.5% ABV, leaving a lingering, punchy bitterness and floral nuances typical of the Mistral hop variety.
Appearance. Deep gold to light orange (7-10 SRM). Persistent, creamy, off-white head with excellent lacing. While the base style allows for clarity, this heavily dry-hopped version displays a significant, uniform haze.
Aroma. High intensity. Intoxicating waves of pineapple, passion fruit, and citrus zest driven by Citra and Mosaic. A distinct resinous, piney backbone from Simcoe follows, complemented by floral and melon-like top notes from Mistral. Malt is neutral and backgrounded; fermentation is clean with a slight touch of pear-like esters and a hint of smooth alcohol.
Taste. Initial punch of tropical stone fruit and juicy citrus. The hop flavor is complex, transitioning from sweet melon and berry to a firm, resinous bitterness that avoids harshness. Neutral, grainy malt provides just enough support to balance the high hop load and 9.5% alcohol. The finish is dry and clean with a long, resinous, and citrusy aftertaste.
Mouthfeel. Medium-full body with a smooth, velvety texture. Carbonation is moderate. A noticeable but well-integrated alcohol warmth is present, without any harsh hop-derived astringency.
