Brasserie Fantome è un piccolo birrificio belga situato nel villaggio di Soy, nella provincia Lussemburgo in Vallonia, poco distante dall’omonimo granducato indipendente. Il birrificio nasce nel 1988 per opera di Dany Prignon, che con l’aiuto del padre intende ravvivare il piccolo paese donandogli un nuovo appeal, basato sulla tradizione e sul senso della comunità.
Fantome è il termine scelto per rappresentare le birre e tutto il territorio, e si riferisce al presunto fantasma della principessa Berthe, che attira i pochi turisti della zona. La Brasserie Fantome ospita l’impianto da 7,5 hl che produce una cotta a settimana. La birra viene in seguito posta a fermentare in 4 tini per un periodo di 18 giorni e rifermenta in bottiglia per due settimane. L’acqua della sorgente della Val d’Aisne e il mix di spezie ed erbe locali contribuiscono a produrre birre dal grande carattere.
Le birre prodotte sono Fantome Saison, le Saison d’Erezèe (saison differenti prodotte con aggiunta di lime, camomilla, succo di mela, o ginepro), Fantome Chocolat e Fantome Speciale Noel.

Brasserie Fantôme — легендарная бельгийская пивоварня, расположенная в крошечной деревне Сой (Soy) в провинции Люксембург, в сердце Арденн.
